WHAT IS?
Tradition is the result of innovation that was successful.
The Kyoto style brewing process entails dripping cold water of coarse-ground coffee over a period of 24 hours to 30 hours, one drop at a time.
This technique allows the grounds to breathe and enhances the flavor compared to just steeping the coffee, which is lazy and tastes gross.
Legend has it that the Dutch East India Company, which was founded in the year 1602 as a trading company and is widely considered history's very first corporation, would not allow for fires on their trade ships so as to not risk the cargo ending up at the bottom of the sea from a ship fire.
The crew though needed their coffee so they began brew the coffee cold instead of hot which was revolutionary for the time.
And just 2 years earlier in the year 1600, the first dutch ship, de Liefde aka The Love, landed in Japan's Usuki Bay. This landing created the possibility for the Dutch to establish trade routes in Japan which 9 years later in 1609, the Dutch East India Company had regular trade with Japan.
The Dutch sailers eventually shared their cold brew with the Japanese population whom greatly appreciated the colder temperature for consuming the beverage.
The Japanese then began developing new way to create the cold brew using ancient tea making techniques which involved slow dripping processes. The technique was officially created in Kyoto Japan in the early 1600's and has widely remained unchanged for the last 400 years.
And it is often referred to as Dutch Cold Brew given the shared history of the two peoples on opposites sides of the world striving to enjoy cold brew coffee.

KYOTOPE is a weekly cold brew delivery service for your business that allows your team to choose from various coffee brands, so they have multiple cold brew options to choose from and drink throughout the year.
As the brewing process I use results in a concentrated cold brew, the recommended serving size is 3 liquid ounces until you get a feel for effect of the coffee.
THE BREWING PROCESS
Depending on the brand's blend used, it can take anywhere from 24 to 30 hours to brew one gallon of cold brew using the Kyoto drip method. Some beans are thirsty AF and brew in 24 hours and some take longer because they make you work for it.
There are around 20,000 drops in a gallon of water and the drop rate is set to a slower pace to allow for the most flavor of the coffee to be extracted by gravity throughout the process.
Yes, I brew the coffee at a specific ratio using a technique I have practiced for the last 20 plus years to get the ratio just right.
No, I use dedicated grinders for each individual brand coffee blend as opposed to just using one grinder for all the blends. It is more expensive equipment wise but it helps prevent the different blends from affecting the flavor of others but running them all through one single grinder.
Steeping is the process of just drowning grounded coffee in water for a period of time and it is lazy, disrespectful to all the hard working people that grew and harvested the beans, and makes the coffee taste like a Dinosaur's sock!

Blooming involves saturating the grounds before putting them through the Kyoto style drip brewing process. Some do this to prevent channeling, which is when the water drops channel through the grounds and does not saturate certain sections of the grounds.
This results is those sections remaining dry during the process and are ultimately wasted because no water is able to reach them.
I do not bloom the grounds as I've found that all it really does is mask potential channeling so rather than risk not knowing if all the grounds are being saturated throughout the brewing process, I have developed a method perfected over the course of the last 20 years to ensure all the grounds are saturated and utilized for the final brew without changing the technique that was developed 500 years ago and has remained unchanged.

*I have also attempted in the past to build a 12 foot tall Kyoto drip tower in the past to reduce the circumference of the section holding the coffee grounds just to try an eliminate channeling. This idea did not pan out but it was pretty cool to see cold brew being made from that high in the air.
Yes, I order the beans based on the roaster's schedule to ensure they stay fresh for brewing.
By brewing each week, I can ensure the tasting palette is consistent as opposed to most operations that brew huge batches and let sit for weeks before delivering.
I use high temperature water with a specialized soap that does not affect the taste of the cold brew. The equipment is then further sanitized using UV light.
THE ORDERING PROCESS
The cost per week depends on a couple of factors including the number of gallons you would like delivered and your location.

You are first given an account so you can login and see your order history at any time.
During the 3rd week of each month, I will request your weekly coffee selections for the upcoming month.
Then on the 1st day of each month, we process your monthly payment for your selections.
Your coffee is then delivered each week.
Yes, that is how the service is designed. If you want to try a different brand each week or stick with the same brand throughout an entire month you can do so.
The container sizes available are 1 gallon and 5 gallon.
The coffee is sealed in a plastic container with an easy to dispense spout that is set in a cardboard box that goes right in your refrigerator for easy access for the team.
So if you want 3 gallons per week, or 4 or 8 or 17, you have options.
The 1 gallon boxes are 11" tall by 4" wide by 10" deep.
The 5 gallon boxes are 8" tall by 12" wide by 20" deep.
KYOTOPE is a single person operation so you will only ever have to deal with one person at any given time. I also brew each gallon personally to ensure consistent results.

THE DELIVERY PROCESS
Yes, a tracking number is emailed with each shipment, so you have the delivery date specified by the carrier.
I can try my best to allow for a specific day of the week for delivery.
I cannot guarantee delivery on a specific day each week however as the delivery service may run into delays on their end but for the most part I should be able to hit a specific delivery day over time as I track the deliver time to your specific address.
Yes, there are many different countertop refrigerators available that fit both the 1 gallon and 5 gallon boxes sizes well and I can recommend a few options based on the box sizes you are currently receiving each week.

Because I've tried steeped coffee over and over throughout the last 2 decades and if dinosaurs ever developed and wore socks, that is 100 what steeped coffee tastes like.

No, KYOTOPE is only for businesses that want to offer cold brew to their employees.
However, employees have been known to top off their water bottles from time to time at the end of the workday, especially on the last workday of the week:)
Yes, we build custom towers as many prefer the flavor and caffeine extraction that results from the Kyoto drip process and want to replicate it.
KYOTOPE is a great resource for any team to help increase focus and productivity. I'm not going to find a cure for cancer or invent time travel as I'm on the back 9 at this point and just enjoy slowly making coffee.
BUT some mind somewhere out there is likely going to get a taste of this cold brew, wherein the technique has been mastered for 5 centuries now and achieve something on par with curing cancer or time traveling.
And it tastes really good too.
